Roasting and freshness
When are your coffees roasted?
Our coffees are roasted Monday to Friday in our workshop located in Sainte-Julie, near Montreal.
How long does coffee stay fresh?
For an optimal experience, we recommend consuming your coffee within weeks of opening the bag. The coffee remains excellent for up to 8 weeks after the roast date.
How should I store my coffee?
Keep your coffee in its original bag, away from light, humidity and heat.
Do you grind coffee to order?
Yes. If you order ground coffee, it is ground just before preparing your order to preserve maximum freshness and aromas. However, we recommend whole bean coffee with a home grinder for an optimal experience.
Do you use a specific roaster?
Yes. We roast on a Probat P12, a benchmark roaster in the specialty coffee industry. Each profile is developed using high-precision temperature probes to ensure remarkable consistency batch after batch.

Are your capsules compatible with Nespresso® machines?
Yes. Our capsules are compatible with Nespresso® OriginalLine machines only. They are not compatible with Vertuo machines. Our capsules are made from compostable material.

Specialty coffee
Discover the world of specialty coffee through our most frequently asked questions about roasting, brewing methods, aromatic profiles, and coffee selection.
What is a specialty coffee?
Specialty coffee refers to coffees that have scored over 80 points out of 100 according to the Specialty Coffee Association (SCA) criteria. It is distinguished by its traceability, the quality of its terroir, its meticulous processing methods, and precise roasting. At 94 Celcius, we work directly with internationally recognized producers for their excellence. Each coffee we select tells a precise story, from the producer to your cup.
What's the difference between filter coffee and espresso?
Espresso is extracted under high pressure with a very fine grind, producing a concentrated, full-bodied and rich beverage. Filter coffee uses a coarser grind and gentle hot water extraction, resulting in a lighter, clearer and more aromatic cup. Some of our coffees express themselves beautifully in both methods; our team can guide you according to your preferences.
What is a unique origin?
A single-origin coffee comes from a single identified farm, region, or cooperative. Unlike blends, it allows you to appreciate the specific terroir of a place—the altitude, coffee plant variety, soil, and producer's expertise are directly reflected in the cup.
What is traceability in coffee?
Traceability means that every coffee can be traced back to its producer, farm, and often its specific plot. At 94 Celcius, we indicate on each product the producer's name, country and region of origin, coffee tree variety, and processing method.
What is the coffee processing method?
Processing refers to how coffee cherries are transformed after harvest to extract the bean. The main methods are washed, natural, and honey. Each method directly influences the final aromatic profile: natural will give more fruity and sweet notes, washed a cleaner acidity and a brighter cup.
How to tell if coffee is good for espresso or filter?
Each product sheet indicates the recommended method. Generally, blends and darker roasted coffees are well suited for espresso. Lighter roasted single origins often perform better as a filter, although some coffees are excellent in both methods.
What is co-fermentation or infused coffee?
Co-fermentation is a process of transforming coffee cherries in the presence of selected microorganisms — yeasts, bacteria, fruits — to develop unique and complex aromatic profiles. It is one of our specialties at 94 Celcius and a rapidly expanding category in the global specialty coffee world.
Blog post on the subject!
How do I choose my first specialty coffee?
If you're just starting out, our Classic blends like Covalent are perfect—balanced, accessible, and excellent for both espresso and filter. If you're curious, our Explorer single origins will introduce you to unexpected flavors. And if you want to be surprised, the Expé Club delivers our rarest lots directly to your home every month.
Why do some coffees cost more than others?
The price of a specialty coffee directly reflects what happened before it arrived in your cup.
Several factors explain the price differences in our catalog:
Micro-lots — some coffees are produced in very limited quantities, sometimes a few tens of kilograms per harvest, from precise plots at high altitudes. Scarcity and extreme traceability come at a cost.
Rare varieties — Gesha, in particular, is one of the most sought-after varieties in the world for its exceptional floral and tea-like profiles. Its cultivation is delicate, its yield low, and its global demand high — which is directly reflected in its price.
Co-fermentations — this process requires advanced technical know-how, rigorous monitoring of fermentation, and often several weeks of additional work from the producer. The co-fermented lots we select are among the most innovative and complex in the industry.
The producer's work — behind every premium coffee are producers who invest heavily in quality: selective grain-by-grain picking, controlled drying, fermentation infrastructures. This work deserves fair compensation.
At 94 Celcius, our Classic coffees start around $22-23, and our Exceptional lots — Gesha, rare co-fermentations, exceptional micro-lots — can exceed $30-35. The price difference is the difference in the in-cup experience.
Is specialty decaf really good?
Yes, and we understand the skepticism. Decaffeinated coffee has long suffered from a deservedly bad reputation, linked to aggressive chemical processes that destroyed the coffee's aromas.
At 94 Celcius, our decafs are a category in their own right, not an afterthought. Here's why they are different:
The process makes all the difference. We select decaffeinated coffees using gentle methods such as the water process (Swiss Water Process) or natural ethyl acetate (sugar cane), which preserve the aromas and complexity of the bean without chemical residues.
The base coffee must be exceptional. A bad decaf coffee remains a bad coffee. That's why we apply the same selection criteria to our decafs as to our other origins—traceability, sensory profile, producer quality.
Our decaffeinated co-fermentations, the Decaf Lychee Peachy and the Decaf Candy Blast, are the perfect example: decaffeinated Colombian coffees with fruity and vibrant profiles, as complex as any caffeinated lot in our catalog.
Whether you have a caffeine sensitivity, drink your coffee in the evening, or are simply curious—our decafs deserve to be discovered for what they are: great coffees.
