When the sea meets the mountains

Grown on the heights overlooking Ōmura Bay, this matcha is the result of a unique collaboration between four growers from the Sonogi cooperative in Nagasaki. Together, they combine their know-how to fashion an exceptional matcha from the Yabukita cultivar, shaded for 21 days then transformed into tencha before being finely ground.

The result: a silky-fine emerald powder (10-12 microns), revealing a marked sweetness, rounded umami and marine accents reminiscent of the salty air of the Japanese coast.

Recipe

For espresso we recommend:

18 grams of coffee in the filter holder for 35 grams of liquid coffee in 25 seconds.
