How did we arrive at these incredible notes?

Let me tell you the fascinating story behind Péché Mortel 2.0, and how we were able to capture those sweet, fruity notes through a process of unique co-fermentation.

The secret lies in co-fermentation: Meet Sebastian Ramirez

If you're wondering how you get to a coffee that tastes like Skittles, you need to get to the heart of the process. This is where Sebastian Ramireza Colombian coffee producer, enters the scene with its innovative techniques.

Sebastian is no ordinary coffee producer. His co-fermentation method is at the cutting edge of innovation in the world of specialty coffee. He uses wine yeast and adds dehydrated fruits, such as red fruit and orangeto create absolutely unique flavor profiles. The method is complex and requires meticulous attention at every stage. Here's how it works:

  1. Harvesting coffee cherries As with all good specialty coffees, the process begins with a rigorous selection of cherries. But it's after that that things get really interesting.
  2. Anaerobic fermentation The cherries are placed in vats where they ferment without oxygen for a period of 120 hours with wine yeast. This step infuses the coffee with subtle aromas while controlling acids for a balanced taste.
  3. Adding dehydrated fruit To further accentuate the fruity notes, Sebastian adds dehydrated fruit, including red berries and orange, during the second anaerobic fermentation. This process intensifies the flavors and gives that inimitable sweetness reminiscent of Skittles candies.
  4. Precise drying Once fermentation is complete, the coffee is carefully dried in marquesinas at 40°C, a drying method that preserves all the aromas.

Each step in the process controls the flavors, giving the coffee its sweet and tangy notes. This is how the blend of Deadly Sin 2.0 takes shape: a coffee so unique and gourmet it could almost replace your favorite Halloween treats.

Adding a sweet jewel: Lucia Mamani's honey coffee process

But that's not all. We wanted to take the experience even further, by adding an extra touch of sweetness to this already divinely sweet blend. That's why we decided to add another exceptional coffee, this time from Boliviaand produced by Lucia Mamani.

Lucia Mamani is a renowned coffee producer from the Uchumachi region of Bolivia. Her coffee is processed according to the honey processA method which, unlike the washed process, retains some of the fruit pulp around the bean during drying. This retains some of the fruit's natural sugars, resulting in a coffee with smoother, sweeter notes.

The addition of this honey coffee to our Péché Mortel 2.0 blend has sublimated the already fruity notes with a natural softness which coats the lively acidity of red fruit and orange. The result? A cup of coffee so gourmet you'd think it had been prepared by a master confectioner.
