Sweet Papayo is, without a doubt, one of the finest Papayo coffees we have worked with to date. A remarkably precise coffee, where notes of yellow tropical fruits settle on a creamy texture reminiscent of caramel and dulce de leche. An elegant and enveloping expression of this rare variety.

A rare variety, revealed with finesse.

Papayo is an expressive, but demanding variety. Here, it is showcased without artifice, allowing its natural sweetness and aromatic complexity to shine through.

A highly precise wash

The process begins with 24 hours of oxidation , allowing the cherries to develop their complexity.
After pulping, the grains ferment for 60 hours in open vats , a key step to intensify the sweetness and structure the cup.
The final washing and slow drying preserve all the aromatic delicacy of the coffee.

A vision driven by a new generation

This batch is signed by Yessica Parra and her brother Diego, fourth generation producers in Pitalito, Huila.
With Diwan Coffee , they are beginning a new chapter: that of a modern, rigorous and deeply human approach to specialty coffee.
This batch was part of their very first exports , a pivotal moment in their journey.
