Finca El Paraíso: an open-air laboratory

Founded in 2008 by Diego Bermúdez and his brother Alexander, Finca El Paraíso is located in Piendamó, in Cauca .
Without a coffee-growing heritage, Diego has built a place for himself in the coffee world thanks to a methodical approach, inspired by his studies in agricultural administration.

Since their victory at a regional competition in 2015, the farm has become a global benchmark for innovative and reproducible processes.

A fermentation process designed for consistency

Red Plum is produced through a controlled double fermentation , guided by an exclusive culture developed from mucilage and cascara: Paraíso Red Fruit .
This approach intensifies the red fruit aromas while ensuring remarkable batch-to-batch stability a rarity in boldly profiled coffees.

Innovation in the service of clarity

After fermentation, the coffee undergoes a thermal shock wash , followed by dehumidified drying .
These techniques lock in the aromatic compounds, stabilize the cup, and prolong freshness. The result: a transformed Castillo, reliable for roasting and spectacular in tasting.
