From the Jin Xuan cultivar, this semi-oxidized tea is a treasure from the high mountains of Taiwan. In the cup, it reveals a delicate floral fragrance and a surprising milky sweetness without any additives. Each infusion reveals new facets, between buttery smoothness, hints of vanilla and floral radiance, like a caress that evolves over time.

Origin and know-how

  • Region: Pasha Mountain, near Pasha village, Menghai County, Yunnan (China)

  • Process: Sun-dried, hand-rolled, aged in bamboo baskets, slow cellar fermentation

Recipe

For espresso we recommend:

18 grams of coffee in the filter holder for 35 grams of liquid coffee in 25 seconds.
