The big jump!
It all began during a stay in France, where I was conducting studies on the impact of lipid droplets on the autophagy of intestinal cells. I wasn't expecting to discover coffee in this small Parisian apartment, where the bathroom and kitchen were combined.
Coffee became my daily and nightly companion. I gradually explored its diversity, savoring countless varieties, whether on waking, during long nights of study, or after well-drunk evenings. It was with an iconic lever-operated espresso machine that I fully appreciated the splendor of coffee. I was captivated by the richness of the aromas and the diversity of flavors associated with each terroir. My journey had begun: the quest for the best coffee (Marc-Alexandre, the coffee hunter)!
Back in Canada, I perfected my roasting skills. Armed with a 1970s corn popper, a wooden chopstick, and several varieties of green coffee beans, I was determined to find the perfect cup of coffee. After a lot of fun, a few moments of discouragement, coffee beans scattered all over my apartment, and above all a lot of perseverance, I finally achieved an interesting result.
The 94 Celcius Micro-Trefacteur adventure has no precise date. It's an idea that matured over the course of my travels around the globe. One Wednesday evening in February 2017, as I was sitting on the terrace of a splendid café in Medellín, Colombia, it clicked: what if I could contribute to the comfort and emancipation of people more than 6,000 kilometers from home?
Despite my years working in science and studying the mechanisms of the human body, I hadn't seen any concrete change around me. So, the idea of creating 94 Celcius was born out of a desire to encourage small-scale coffee producers and make a tangible difference to their daily lives.
94 Celcius aims to tell the story of each coffee-growing region and highlight the passionate people who cultivate this precious fruit. If it weren't for these producers who are determined to make their coffee culture shine, I wouldn't be here to share my story. I invite you to embark on this great adventure to discover the complexity of coffee and, above all, the incredible community that surrounds it.
