Carolina Ramirez is one of the rising stars of Unblended's Young Producers program. A lawyer by training and an endurance runner by passion, she embodies a new generation of producers who approach coffee with curiosity, method and sensitivity.

A transformative return to her roots

When the pandemic struck, Carolina left Medellín to return to her family farm in the Colombian Andes. It was here that she fell in love with specialty coffee - not just the cup, but the entire production chain.

Today, she works hand in hand with her mother. Together, they conceive, select and process each batch with remarkable care.

This washed coffee is a blend of two batches harvested one day apart, a choice that brings complexity and balance to the final profile. Every stage is carefully thought out, measured and respected, from fermentation to drying.

Process

  • Hand-picked from perfectly ripe cherries

  • First fermentation: ~9 h on cherry

  • Depulping, then additional fermentation for 27 h

  • Addition of a second batch harvested the following day, fermented 14 h

  • Final washing

  • Slow drying for 2 to 3 weeks

This precise protocol preserves aromatic freshness while developing an elegant floral and herbaceous structure.
