With Raspberry Sorbet, Brayan Alvear translates this sensation into a cup of coffee.

Produced in Las Palmas, in the Huila region of Colombia, this lot of Castillo was co-fermented with raspberryto develop an intensely fruity, juicy, and gourmet profile. From the first sip, the raspberry stands out with remarkable clarity, accompanied by a sweetness reminiscent of red fruit coulisand a fresh finish evoking a true sorbet.

As a filter coffee, the profile is precise and explosive. As an espresso, the fruit becomes denser and more indulgent. Over ice, it's a true red berry bomb.

At Las Palmas, in the Huila region, Brayan Alvear represents the new generation of Colombian producers pushing the boundaries of fermentation.

A fourth-generation producer, he combines family heritage with a scientific approach to coffee. Each fermentation is carefully controlled to develop unique aromatic profiles while preserving the coffee's identity.

For several years, we have enthusiastically followed his work and are proud to share his most creative coffees.

Fruit-inspired fermentation

After a 48-hour pre-fermentation in closed tanks, the coffee is de-pulped and then inoculated with finely ground dried raspberry, used as a natural source of sugars and yeasts.

The coffee then undergoes a five-day fermentation in a mixture of mucilage and raspberry, allowing the aromatic profile to gain intensity, sweetness, and complexity.

Drying combines an initial stage in the sun followed by controlled mechanical drying, before a 30-day stabilization period in GrainPro bags to harmonize the aromatic compounds.

The result is a remarkably expressive cup where raspberry is immediately recognizable, while maintaining the coffee's balance and structure.
