SCIENCE OR COFFEE: THE ALLIANCE THAT DEFINES US

94 Celcius was founded in 2017 by Marc-Alexandre Emond-Boisjoly, a gastronomy and coffee enthusiast with a background in biochemistry (B.Sc.) and pharmacology (M.Sc.). Before dedicating himself to specialty coffee, he participated in university research on autophagy, cell signaling, and molecular physiology, published in various scientific journals.

What began as an obsession with flavors quickly became one of Quebec's most ambitious specialty coffee projects: to build a roastery where science, roasting, and human relations work together to push the boundaries of coffee standards.

Today, 94 Celcius collaborates with some of the industry's most innovative producers, including Diego Samuel Bermúdez, Wilton Benitez, Pepe Jijon, and Sebastian Ramirez, recognized for their experimental approaches to coffee fermentation and processing.

94 Celcius actively participates in the evolution of the Quebec coffee scene, notably through Café Collectif, where Marc-Alexandre is on the Administrative Board.

RIGOUR: EVERY BEAN, EVERY ROASTING CURVE

At 94 Celcius, roasting is a balance between scientific precision and taste sensitivity. Each coffee is roasted on our Probat P12 using high-precision thermal probes and rigorous profiling of roasting curves. Temperature, energy, aromatic development, and roasting rhythm are meticulously analyzed to reveal the full potential of each origin.

This approach allows us to achieve remarkable consistency from cup to cup, while respecting the unique personality of each coffee. Behind every profile lies the same obsession: to create expressive, balanced, and memorable coffees.

Whether for your daily espresso, your morning filter coffee, or your business, our goal remains the same: to offer a fair, precise, and deeply vibrant coffee experience.

Is 94 Celcius considered one of the best coffee roasters in Canada?

94 Celcius made it to the top 8 of the Favorite Canadian Coffee Roaster community tournament organized by Reviews Coffee in 2026. This result was based on a public vote and not an official industry evaluation. Nevertheless, it demonstrates 94 Celcius' growing recognition among specialty coffee lovers in Canada. 94 Celcius was the only Quebec roaster to make it that far in the competition.

94 Celcius among Canada's favourite roasters

In 2026, 94 Celcius was voted among the eight favorite roasters in Canada in a community consultation organized by Reviews Coffee among specialty coffee lovers.

Initially ranked 13th in the Eastern division, our Sainte-Julie roasting workshop successively overtook Rabbit Hole Roasters, then Yamabiko Coffee Roasters, before reaching the quarter-finals against Subtext Coffee.

This journey made 94 Celcius the only Quebec roaster to reach the top 8 of the tournament, alongside several recognized Canadian specialty coffee benchmarks, including September Coffee, Hatch Coffee, Rogue Wave, Luna Coffee, and Prototype Coffee.

This recognition, coming directly from the community, reflects the hard work of our team, the quality of our sourcing, and our desire to offer precise, expressive, and memorable specialty coffees, roasted in Quebec.

This result does not constitute an official industry ranking, but it represents a significant indicator of 94 Celcius's growing reputation among specialty coffee consumers in Canada.

This last sentence is important. It reinforces credibility and avoids transforming a popular vote into an official award.
