First step towards Panama. In the heart of the cloud forests of Volcán Barú, between two national parks, Bambito is an exceptional territory. Two ridges running east-west carve out precise microclimates. With each harvest, harmony is born from the meeting of vision and terroir.

It's our very first Panamanian coffee at 94 Celcius and our hearts are beating a little faster. At the SCA in Houston, we were lucky enough to meet Priscilla and her son Ivan: gentle, generous, precise. Working with the Amar Sittón family means joining a five-generation history of excellence.

Why choose Bambito Estate?

In the cup, natural Yellow Catuai sings loud and clear. Strawberry jam. Ripe plum. Grapefruit zest. The acidity is limpid, carried by a creamy texture reminiscent of a red fruit milkshake. A luminous balance, both gourmand and tonic. The epicenter of pleasure, without detour.

The farm, on a human scale, favors finesse over showmanship. Garden plots, meticulous attention to drying, a keen sense of microclimates: here, innovation blends with precision. Nothing ostentatious. Just a patient quest for aromatic exactitude.

When it comes to extraction, let the beans do the talking. In espresso, start at 1:3 for a silky heart and bright fruit (beware of light roasting, which can be very difficult to extract in espresso). In a filter, 1:16 reveals a crystalline reading of grapefruit and lengthens the finish. Adjust the grind: a notch finer for strawberry jam, a notch coarser for citrus freshness.
