Carolina Ramirez - Quimera
The coffee that pushes the limits of altitudeQuimera is the fruit of a deep conviction and a desire to do things differently. On the Guayacanes farm, the soil is particularly fertile and all the coffees grown there are distinguished by their great sweetness, despite being at an altitude of less than 1,700 m. This goes against the popular belief that only coffees grown at high altitudes, or certain varieties, can achieve such quality. Following a difficult winter season on Carolina's main farm, San Antonio, the team decided to put Guayacanes in the spotlight.
The estate produces exclusively the weather-resistant Cenicafe 1, Castillo and Caturra varieties, capable of maintaining an ideal taste profile and exceptional quality. The cherries are rigorously selected and picked at optimum ripeness, then undergo 14 hours of fermentation before being sun-dried on open patios for almost three weeks. The result? A gourmet cup revealing notes of red fruit, cocoa powder and a hint of citrus.
Guayacanes
Carolina Ramirez is one of the stars of Unblended's Young Growers program. A lawyer, an endurance runner and an outstanding producer of specialty coffee, she is an inspiration to all. After studying law in Medellín, Carolina returned to live on the family farm in Andes with her parents at the start of the pandemic. She discovered a real passion for production and the whole value chain of specialty coffee.
Today, Carolina works closely with her mother to design each and every one of her coffees. Both supervise the selection and processing stages, guaranteeing impeccable quality with every harvest.
