    The Process Behind Kaleido

    Every stage in the production of Kaleido is meticulously designed to guarantee exceptional quality and aromatic complexity:

    1. Cherry harvest: Cherries are picked at optimum ripeness.
    2. Ozone disinfection: Cherries are cleaned with ozone to ensure impeccable cleanliness.
    3. Anaerobic fermentation: Cherries ferment for 72 hours in specially designed tanks.
    4. Pulping and degumming: Pulp and mucilage are extracted and used to produce process-specific micro-organisms.
    5. Introduction of micro-organisms: These cultures, rich in aroma and flavor precursors, are added to the tanks for a 36-hour pressurized fermentation.
    6. Thermal shock process: This treatment consolidates aromatic richness while guaranteeing optimal drying conditions.
