  We are delighted to present you with an exceptional new batch from David Batres, a coffee producer in Guatemala, with whom we have been collaborating for several years. It will please the lover of short espresso! A naturally sweet coffee.
  
  This new coffee, with the Red Honey process, comes from his farm, Finca Batres I , located in the Laguna Seca region, Quesada, Jutiapa , at an altitude of 1,660 meters . Grown from the Red and Yellow Catuai varieties, this coffee embodies all the know-how and passion of David, a fourth-generation producer, who continues to innovate to offer coffees of remarkable quality.

  The Miel Rouge process used for this coffee highlights meticulous and environmentally friendly methods. After a manual harvest carried out early in the morning, the coffee cherries are weighed and then transported to a drying station at an altitude of 990 meters. There, they are sorted manually to ensure a maturity of 95 to 98%. Then, a dry anaerobic fermentation of 48 hours is carried out, followed by a delicate drying on raised beds, where every detail is controlled, such as the temperature, in order to preserve the aromatic complexity.

  This coffee offers balanced and fruity flavors , with sweet and delicate notes thanks to the use of specific yeasts during fermentation.
