Cold coffees: giving another dimension to our coffees

Summer is here! With its sometimes stifling heat, its afternoons by the pool and its walks in the great outdoors, the summer season invites you to relax. But when it's hot, we don't always feel like drinking our coffee hot, and it's often more convenient to carry it cold on our adventures.

Today, we're taking a look at different ways to prepare a refreshing cold brew, as well as a few suggestions from our summer menu.

Flash Brew: Express coffee cooling

The flash brew method is ideal for achieving a cold specialty coffee in no time. As the name suggests, this rapid technique involves extracting the coffee while it's hot, then pouring it directly onto ice. This "flash" process preserves the floral aromas and fresh fruit notes, giving you a light, clear cup.

One of the great advantages of this method, in addition to its speed, is its flexibility: you can use it with your espresso machine as well as with your preferred manual brewing method. And there's no need to make your coffee longer! Simply add ice, and it's ready to enjoy.

Recipe

Espresso Simply pour your coffee directly onto ice. You can then add milk, water or even a soft drink for a refreshing effect.

Filter For this method, prepare a hot-infused semi-concentrate to be cooled over ice cubes. Here are a few adjustments to make to your usual recipe:

  • Slightly reduce the ratio go from 1:16 to 1:15, for example.
  • Adjust the grind To do this, turn your mill down a notch or two.
  • Infusion Use ⅔ of hot water to pour over ⅓ of ice. For a 500-ml carafe, this means about 330 ml of hot water on 170 g of ice.

Recommended coffees

For this method, you can use any type of coffee, but here are our favorites:

Espresso :

  • Décaf El Vergel An ultra-juicy coffee with citrus notes, perfect for watching the kids by the pool.
  • La Victoria This little jewel offers a very sweet cup, almost like a dessert.

Filter :

  • Café de Soif A blend that could be mistaken for a beer or a coffee, giving you the best of both worlds in a fresh, fruity, slightly cereal cup.
  • Les Tassés the flash brew method reveals the full potential of this coffee's tropical fruits.
  • La Victoria The filter infusion brings out the floral side of this classic coffee.

Cold Brew: Slow Cold Brewing

Visit cold brew is a brewing method that requires a little patience, but the results are well worth the effort. Unlike flash brew, this technique requires immersion for at least 12 hours in the refrigerator. It produces an intense coffee concentrate, accentuating notes of cooked fruit, chocolate and sugar.

Advantages of Cold Brew

  • High yield Making cold brew allows you to produce a large quantity of concentrate, which can be stored for up to a week.
  • Personalization : Everyone can adjust their cup to their own preferences, lengthening the concentrate with water, milk or even a soda.

However, not all coffees lend themselves to this method. We recommend using medium-roast coffees and avoiding fermented ones, as slow brewing can accentuate their fermented notes.

Cold Brew Recipe

Equipment required :

  • Piston coffee maker
  • Pitcher with infuser (cold brew or not)
  • Closed container with cloth filter (cheesecloth type)

Grinding Use the coarsest grind possible.

Ratio We recommend a ratio of 1:8 (for example, 125 g of coffee to 1 L of water). This will enable you to make your coffee longer with an equivalent volume of water or milk.

Method :

  1. Add the coffee beans to your carafe or container.
  2. Add the water and mix well.
  3. Leave to infuse in the refrigerator for at least 12 hours. For a quicker start, you can make a hot pre-infusion with twice the weight of coffee.

Recommended coffees for Cold Brew

For cold brew, choose our medium-roast coffees, avoiding overly funky profiles:

  • Décaf Elias and Shady Bayter This classic coffee offers a very chocolaty cup, perfect for children's snacks, especially when extended with milk.
  • Supernova Our dark filter blend, created with Les Tassés, reveals a fruity, chocolatey side, ideal for summer.
  • Les Tassés The cold brew brings out the best in this coffee, delivering a smooth, juicy cup. Extend it with a lime soda for a refreshing drink reminiscent of tropical fruit lemonade.
  • La Victoria In cold brew, this classic coffee becomes a very sweet cup, perfect for accompanying lemonade or for a gourmet dessert version with a scoop of chocolate ice cream.

Slow Drip: Cold drip infusion

The slow drip is an innovative technique for creating a tasty coffee concentrate. Halfway between flash brew and cold brew, it requires a little extra equipment, but is well worth the effort. Drip brewing extracts the sweetness of coffees while enhancing their fruity notes, without accentuating fermentation.

This method has several advantages:

  • Speed : It takes about an hour to prepare your coffee.
  • Ease of use Even if the grind is not perfectly adjusted, the result in the cup is always excellent.
  • No refrigerator required Contrary to the cold brew, this method requires no space in your refrigerator.

Preparation method

Making slow drip coffee is quick and easy, and here's how:

  1. Use a 1/12 ratio (as for a French press): this means 50 g of coffee for 600 ml of water.
  2. Grind the coffee a little more coarsely than for a filter infusion, between the settings of a v60 and a French press.
  3. Pre-wet the coffee and place a small filter over the ground coffee.
  4. Put the drip back on and the reservoir on top, then add room-temperature water.

Once brewing is complete, you can lengthen the coffee according to your preferences for a personalized taste experience.

Recommended coffees

For this method, we recommend light- to medium-roasted coffees so that their aromas can develop slowly:

  • Décaf El Vergel Our fruity summer coffee will be perfect with this method. You'll be able to enjoy an intense citrus coffee, with a touch of spice, without the effects of caffeine, perfect after a barbecue on the terrace.
  • La Victoria This method fully reveals the floral, sweet side of this coffee. Lengthened with a lime or neutral soda will give you a pleasant, easy-to-drink cup.
