Bryan, a producer from Acevedo, a municipality in Huila, Colombia, more specifically San Adolfo, is a rural coffee-growing area and one of the most prolific in coffee production. His father passed on to him all the virtues and knowledge the land has to offer, giving him the tools to work and prosper in the future. From the age of 13, Bryan accompanied his father after school to learn all he could about coffee. Years later, this passion became his vocation.
This year, Bryan launched a collaborative project with over 60 growers, including his own family. Together, they harvest and sell their cherry coffee at a better price, a demanding process since they harvest the entire municipality themselves. In collaboration with the Forest and Ancla processing plant, we have experimented with innovative fermentations to create unique flavor profiles.
This specialty coffee from Huila is a truly exotic journey! Get ready for an explosion of tropical flavors thanks to co-fermentation with passion fruit. A decaffeinated coffee like you've never tasted before. The body is velvety, slightly sweet, with bright, tangy notes of passion fruit and tangerine, offering an experience as refreshing as it is captivating! 🌿☕🍈 Some would even go so far as to say that this could be the best decaffeinated coffee.
These beans are treated with care at every stage of the process. First, a 24-hour pre-fermentation in a plastic bag allows them to explore new dimensions of flavor. Then, a 5-day anaerobic fermentation with dehydrated and ground passion fruit intensifies the fruity aromas. Finally, a 10-day mechanical drying period stabilizes and anchors all these complex flavors. It's not just coffee; it's a true tropical taste adventure! ☕🏃♂️🍍
