Carolina Ramirez, a star of Unblended's Young Producers program, is a lawyer, endurance runner and incredible specialty coffee producer. She truly embodies the excitement we feel when we see young talent working on coffee farms. After studying law in Medellin, she decided to return to live with her parents on their farm in the Andes when the pandemic struck. She fell in love with the world of specialty coffee and its production chain. Today, she collaborates with her mother to design all her coffees, and both are responsible for selection and processing.

According to Carolina, the word that best describes this coffee is "Serenity". This is her first experimental process, and it has resulted in one of the finest coffees she has ever produced. That's why she's so proud of it. The coffee is picked when ripe, selected by hand, and left in an open steel vat for 140 hours while filtering and pouring the coffee juice over the cherries twice a day, every day. It is then pulped and left to dry in the sun on open patios for three weeks. This effort results in subtle notes of red fruit, pineapple and cocoa, combined with a very juicy body. This makes it a coffee you won't want to miss.

Recipe

For espresso we recommend:

18 grams of coffee in the filter holder for 35 grams of liquid coffee in 25 seconds.
