    We present the Chiroso coffee variety, rediscovered in recent years. It's a fairly rare variety, and we're extremely happy to have it on our menu at 94 celcius. This variety originates exclusively from the Urrao region of Colombia, and is renowned for its floral notes and highly aromatic profile.

    Finca Las Mañanitas is located in the Los Aguacates "vereda" in Urrao, Antioquia, Colombia, and is run by Juan Danilo Florez, a 42-year-old second-generation coffee grower, accompanied by his family. The farm covers 14 hectares of land, of which 4 hectares are dedicated to growing coffee. Situated at an altitude of 2,010 meters above sea level, it has around 12,000 coffee trees producing the Chiroso and Catimor varieties.

    Juan Danilo uses the "cochadas" processing method, which involves hand-picking the cherries each day, leaving them in the cherry for one day, then pulping them the following day on top of the previous day's batch. The coffee is then washed together on the Monday of the following week, with batches having been fermented for between 2 and 6 days. After washing, the coffee is dried in parabolic dryers for around 8 to 10 days, depending on weather conditions.

    In search of greener pastures...

    Juan Danilo and his family became coffee growers almost out of obligation. Before growing coffee, they grew tomatoes and lulo, but the intensive applications of pesticides required took a heavy toll on everyone's health. This led them to turn to coffee, which they saw as less invasive, and in the process, they fell in love with the craft.

    Juan Danilo's sons (aged 26, 24 and 22) all help out on the farm, each with a different task, such as harvesting, post-harvesting and land maintenance. In addition to coffee, the farm has dairy cattle and a few lemon trees.

    We started working with Juan Danilo and Finca Las Mañanitas in 2024, and their approach to coffee growing is truly admirable.
