    This coffee is produced by the Restrepo family in Chinchina, Caldas! Nearly 40 years ago, Elmer Restrepo, owner of the El Jardin farm, began his journey into the world of coffee by specializing in the coffee drying process. He learned all aspects of this stage of the coffee cycle and became very passionate about it. We met Juan Felipe, Elmer's son, who is now in charge of processes at the El Jardin farm. He is a very meticulous person who is always on the lookout for new, innovative and unique processes. We could clearly see this in every coffee we tasted. They focus on different processing methods, mainly natural coffees produced on over 150 hectares of their farm in Chinchina.

    This coffee was produced in Caldas. It underwent a 48-hour water immersion process, followed by anaerobic fermentation and sun drying. The water-immersion process gives this coffee a particular complexity and cleanliness.

    On the nose we find big notes of balsam gum, and on the palate it's a fruit salad. Notes of kiwi, watermelon and raspberry. An excellent summer coffee.
