This batch of the Red Bourbon variety was grown at an altitude of 1900 m in the Cauca region, a terroir renowned for its rich soils and ideal climate for growing specialty coffee.
This coffee is the result of a meticulous and innovative process. After harvesting, the beans were subjected to a double anaerobic fermentation, divided into two distinct phases of 52 hours and 48 hours, ensuring unique aromatic development. This was followed by a thermal shock wash to lock in flavours and refine the coffee's profile.
FruitoPop reveals a vibrant, complex bouquet with floral notes of lavender, accompanied by a fruity explosion of berries, orange and passion fruit, all underpinned by a sweet honeyed sweetness. This unique profile is the perfect expression of Wilton's mastery of fermentation and processing techniques to deliver a coffee that is both bold and refined. With an SCA score of 88, FruitoPop stands out among the best coffees on the market.
One of the most remarkable aspects of Granja Paraíso 92 is its commitment to sustainability. All the bean-drying processes are carried out using environmentally-friendly machines that use no fossil fuels. In fact, this equipment requires only a small amount of electrical energy, which considerably reduces greenhouse gas emissions.
